And so it began....

It all started on a girls night out. A few friends and I went out for the evening and had a terrific time! When we returned to my house, everyone was starving, so I went to the kitchen and whipped up an amazingly simple recipe ( you can find it under "breakfast") The girls all loved it and wanted the recipe... what easier way to share it with everyone than start a blog?

Since then - I have added all our family favorites, recipes which people have asked me for or things that delight me. I have also added some stories about events that lead up to the recipes I adore - they seem to go hand and hand in our household!

I don't claim to be a foodie or a chef but I am a pretty darn good cook. I like to put my one little twist on things and surprise people, mix flavors, kick it up a notch...

The story of Beer Cheese Soup....

When I was young my Uncle Phil, Mom, my friend Lisa and I once went on a winter adventure. We headed up to Northern Minnesota for a weekend of snowmobiling. I remember clearly how we somehow ended up singing a song called " I'm not Lisa" the entire way up North but even more clearly I remember the Beer Cheese soup we had at a little Inn after a cold day of snowmobiling. I have tried for years to find a recipe that matched that delicious batch but haven't found anything close, so I have done some experimenting and here is what I have found....

Three Cheese Beer Soup

6 ounces sharp cheddar cheese- shredded by hand ( it melts better!)
6 ounces white cheddar cheese- shredded by hand ( it melts better!)
1/4 cup butter
1/2 cup chopped green onion
2 cloves garlic, minced
1/2 cup all purpose flour
1/2 tsp dry mustard
5 cups chicken broth
1 -12 oz bottle of beer
1 cup whipping cream
10 slices bacon- cooked crisp, drained and chopped
1/2 cup grated Parmesan or Romano Cheese
1/2 teaspoon bottled hot pepper sauce
1/2 teaspoon Worcestershire sauce

1. Bring cheese to room temperature- about 30 minutes. In Dutch oven heat butter until melted over medium heat. Add in onion, and garlic, cook for 10 minutes until tender and slightly browned.

2. Stir in flour and dry mustard then slowly add broth, whipping cream and beer cooking until bubbly- stirring constantly.

3. Gradually add cheese until melted. Add in bacon, hot pepper sauce and Worcestershire sauce.

Makes about 10 servings
